A Good Side Piece: Sweet and Savory Sides

When you order a burger you should always get a side. It’s a compliment to a burger. I question people who don’t get a side. French fries, sweet potato fries, something healthy like a salad. The trendier spots even offer Brussel sprouts, asparagus or broccolini.




Fries, the number one side to entertain a burger comes in different styles. You have crinkle cut, waffle fries, steak fries, straw fries or spiral fries. They’re best when they are all lightly salted, too hot to handle but you have to take a bite anyway and burn your mouth. But its worth it (sometimes). The texture is the most important. They have to be cooked in a way to provide a crunch from being deep fried but some softness from being taken out at just the right time. Do you have your eyes closed like I do, imagining you’re biting that fry right now. It’s so good.

I can’t forget the other potato, sweetness. HA! The sweet potato can come in all those variations as well and when cooked just right offer the same type of love.





Now some places can overcook their fries, you’re bruising your gums as you eat them. To me as a chef/ cook you can see when you have done this. You can look at the color of the fries and see you have done a disservice to you and your patron by serving this. So to any chefs/cooks reading this just do it over and serve the best fries ever. They are a compliment to you and the burger.





The number two to fries are dipping sauces that accompany the side. It’s not just about Ketchup anymore. There are sweet sauces like Chick-Fil-A

Polynesian sauce which is my favorite; and savory honey mustard and rounding it out is ranch. Ranch is cool to me because you can dip your fries or your burger in it, it’s versatile.


For sweet potato fries its different, you are dealing with honey flavors. When I first moved to Charlotte there was this burger spot called BT’s Burger Joint. To dress their sweet potato fries they had a signature honey butter sauce. It had the consistency and shade of honey but it wasn’t. You can taste the sweetened melted butter. Many haven‘t found a better honey butter sauce yet.





When you think of burgers it is only right for it to be accompanied by a side. To not get a side is an offense to the burger. It’s like going to McDonalds and just ordering a sandwich. No one does that. So next time you go to a restaurant and you order a burger please respect it and order a side and enjoy.
